For making shrimps you will require 4 large stems of oyster mushrooms.  Cut into small pieces and soak in warm water for at least 15 minutes

For coating:

  • ¾ cups flour
  • 1/2 cup rice flour
  • ¼ cups cornstarch
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 2 cups panko or bread crumbs
  • 1 1/2 cup soy milk
  • 2 tbsp coconut or apple cider vinegar
  • Canola oil or grapeseed oil for frying
  • 1 tbsp “vegan egg” (flaxseeds soaked in warm water)

For the sauce:

  • Juice of one lime
  • 1 cup vegan mayonnaise
  • 2 tablespoons sriracha sauce
  • ½ cup sweet chili sauce


Step 1
Mix vinegar, soy milk, and “egg” in a bowl. 

Step 2

Take another bowl and combine cornstarch, flour (except rice), garlic, and onion powder. 

Step 3

Now combine the contents of two bowls. You can add more soy milk,if the mixture is very thick.

Step 4
Heat the oil to 180 degrees.

Step 5
After that remove the oyster mushrooms stems from the water.  Roll them in rice flour, soybean flour, and breadcrumbs.

Step 6
Fry them on medium heat until golden brown. Your Vegan Shrimps are ready! Transfer to a paper towel and cerve immediately with your favorite sauce.

Some Useful tips

  • You should prepare all the ingredients in advance for a quick turnaround.
  • Store the leftover in the refrigerator for no more than 2-3 days. The vegan shrimps reheat very well in an air fryer.
  • fry them on low flame, if you want more crispy vegan shrimps.
  • Don’t pour oil in a saucepan in large quantities because the shrimps should hide half only.
