Creamy Vegan Lemon Bars

Creamy Vegan Lemon Bars are a very light and delicate dessert. The below part is a delicious dough; and on the top, there is the most delicate and attractive filling with an aromatic lemon flavor. For the dough:

  • 1 ¾ cup almond flour
  • ¼ cup maple syrup
  • ½ cup tapioca flour
  • ¼ cup melted coconut oil

For the filling:

  • 2 tbsp. cornstarch
  • ⅓ cup freshly squeezed lemon juice
  • Peel ½ lemon
  • ½ lemon, thinly sliced
  • 2 tbsp. coconut oil
  • ½ tsp. turmeric
  • 1 cup skimmed coconut milk
  • ⅓ cup maple syrup
  • ½ tsp vanilla extract


Step 1

Preheat oven to 180 °. at the same time line a small baking sheet with parchment paper. Now move towards making Creamy Vegan Lemon Bars

Step 2

In a large bowl, stir together the tapioca almond and flours. After that, add oil and maple syrup and blend for 2-3 minutes or until smooth. 

Step 3

Now stir in the dough onto a baking sheet and bake it for about 15 minutes. The dough will be browned around the edges.

Step 4

Take a saucepan and combine the lemon juice and cornstarch. blend them until no lump is left. After that, add coconut milk, butter, maple syrup, vanilla extract, turmeric, and lemon zest into it.

Step 5

Now bring the mixture to a boil over medium heat for 8 minutes. (keep stirring at this stage)

Step 6

Remove the mixture from heat and let it cool for at least 10 minutes.

Step 7

Spread the filling over the dough evenly and refrigerate for 3 hours. 

Step 8

Your vegan lemon bars are ready!! Cut into bars, sprinkle powdered sugar, and decorate with lemon wedges. 

Some Useful Tips

  • You should use baking paper or foil to make the bars. it will prevent the dessert from burning Also don’t use a lot of sunflower oil.
  • You can make gluten-free lemon bars by using gluten-free flour.
  • This dessert goes well with a glass of herbal iced tea or coffee.
